Organic molecules have four general characteristics. First, they are all carbon-based, meaning they all contain carbon. They consist of just a few elements that combine into small molecules that combine or combine into larger molecules. A third characteristic of all organic molecules is that each organic molecule is made up of different types of building blocks. For example, sugars are the building blocks of carbohydrates, fatty acids are the building blocks of lipids, amino acids are the building blocks of proteins, and nucleotides are the building blocks of nucleic acids. There are about 20 different types of amino acids. These amino acids are made up of five separate parts. The first is the central carbon atom. The second is a carboxyl group (-COOH). The third is an amino group (-NH2). The fourth is hydrogen. The fifth group is the ‘R’ variable group. The only difference in the 20 types of amino acids is the “R” group. Some “R” groups are very small, others are large, and some even form chains and rings. The order and shape of the “R” groups control the shape and function of the protein.
